Carplay to use mobile data rather than wifi

What I'm trying to do:
I'm trying to run CarPlay from my phone (iPhone 13 mini) using mobile data rather than the car's Wi-Fi, as the Wi-Fi is so bad.

Why:
I bought the car as a new approved about 2 months ago and the infotainment has been really disappointing. CarPlay would never connect when I entered the car, I always has to restart the phone for it to connect. I then subscribed to the Land Rover internet thingy, and while the CarPlay connects everytime, I can't access Spotify, Apple Maps, live updates on Google Maps and use the 'New' (formerly browse) function on Apple music.

The solution?:
Yesterday, I got a notification on my phone that it couldn't connect to Wi-Fi, did I want to use mobile data for CarPlay? I pressed yes and it was amazing, everything worked perfectly. The 5G symbol was on the top right of the CarPlay rather than the Wi-Fi sign so I know it was working from 5G.

The problem:
If I switch my phone's Wi-Fi off, it won't connect to the car. I can't seem to connect to the car without Wi-Fi, but I know it can be done because I did it yesterday. I've watched so many videos on YouTube and searched this forum, and I can't find a solution.

There is a beer in it for whoever can help me out.

It is connected via bluetooth, on the PIVI home screen it recognises the phone, it just won't open CarPlay, it says there is a connection issue.

I've gone to 'forget device' and linked it to Bluetooth again. It all looks great until I try to open CarPlay and it says "Connection failed. Reconnect phone and try again". I've done this a hundred times.

I think you may have just solved MY problem. I've pulled up Android Auto on the phone and switched off "start music automatically", That may solve the radio thing for me. Have you checked that "Start Android Auto while locked" is enabled on the phone and "start Android Auto automatically" is enabled on the vehicle?
Yeah, I've tried that. I now think it may be the phone; my wife's phone connected immediately when we tried hers.
